Cut the recipe in half for a 13×9. Used hot coffee instead of water to bloom the cocoa. Put the pan on a jelly roll sheet and poured water around it to bake it in a water bath. This cake is downright amazing!! I baked this for Mother’s Day in remembrance of my deceased mom as she loves chocolate cake. It’s fitting because my husband has a sweet tooth for chocolate cake. Although am glad I followed one of the review from one of the ladies here re decreasing the amount of icing sugar for the icing. I only used 3.5 cups of icing sugar and it works wonderfully just the same, it’s not too sweet and complimented the cocoa taste. I used a fresh brewed coffee as well instead of hot water. Current question: if I wanted to make this as a rectangular 2-layer cake, how long do you think Iโd need to bake it for and/or what size dish do you recommend?
