Amazing, super moist and incredibly easy. Everything you want out of a chocolate cake. Made this cake about a day and a half ago and my husband and I have already finished half.
Used 1 spring form pan and 1 9-inch cake pan (just needed to cook spring form for about twice as long). Cut into 4 layers and used a caramel sauce between layers. Didnโt have a lot of cream cheese so improvised the frosting with the small bit of cream cheese I had, butter, confectioner sugar, cocoa powder and milk.

This will be the only chocolate cake recipe I will ever use from now on! I used milk and lemon juice for the buttermilk and cake flour instead of all-purpose flour. No regrets. This was hands-down the most delicious chocolate cake I’ve made. I LOVE the teeny-tiny zing that the buttermilk provides. The cake is dense, but moist and fluffy–yeah, a bit of an oxymoron. The frosting is to die for. I made this cake exactly as described. It was helpful that you provided guidance that each cake pan would use about 3 cups of batter because I only had two pans, so I reserved the 3 cups til the first two pans were baked.
Also, the rise on this cake is perfect, so when stacking the three layers, it isn’t super wobbly. I’ve made cakes in the past where the center rises too much and you have to either slice off the crown, or deal with a wobbly cake.
Each slice was so decadent. I feel like this could serve 16 people. There was more than enough for the 5 of us, so I’ve wrapped pieces in parchment and ziplocks and frozen them. Thanks for this amazing recipe! I’m so motivated during this covid-19 crisis that I’m going to tackle the carrot cake tomorrow!
