What herbs go well with lamb?
Most fresh herbs pair really well with lamb. A common herb to pair with lamb is mint. In this recipe we use a combination of mint, rosemary, oregano, and parsley.

What temperature do lamb chops need to be cooked to?
Lamb needs to be cooked to a minimum internal temperature of 145 degrees Fahrenheit. Lamb chops in particular, are best eaten at this temperature which is medium-rare. It is not recommended that you cook them above medium (160 degrees F) as the lamb will become chewy.

I cooked these for my mom and dad for their anniversary, and it was so easy. And I’m 14 years old.
Delicious! I used dried herbs bc I did not have fresh. I also did not have a chance to marinate but for about 15 minutes. Still flavorful! I seared on both sides and finished in oven bc I like mine medium well. I will definitely be trying this again and marinating overnight. Also plan to try on steak.
Rach, thanks for the recipe. I did what you suggested with the lamb chops but did the same with seasoning the rack of lamb. The rack of lamb turned out delicious as do all your recipes. I just followed the recipe. I’m adding this to my saved recipes.

I don’t have any fresh herbs except rosemary, can I use dried if so in what amount?
When replacing fresh herbs with dry, you’ll need about 1/3 the amount. So 1 teaspoon instead of 1 tablespoon.
