Delicious and easy. I used blue corn organic tortilla chips. Prebaked them on parchment paper on a large sheet pan. I used up a lot of ingredients that were in my pantry: Amyโs refried beans, Hatch chilies, a can of fire-roasted tomatoes drained, ground beef, cilantro, chopped sweet onions, a ripe avocado, sour cream, and red and green salsa. It was a bit too much for the two of us. We had half of the leftovers for lunch. Will definitely make this again when there a few more to feed.
