I couldnโt believe how delicious this chicken recipe is, I used the same marinade for roasted veggies. I will be making this dish again!
We tried this recipe and really struggled with the cooking. First it was undercooked and then dried out as we continued to cook. We know our oven well, but in retrospect, I think I needed to consider altitude as we live at about 6000 ft. Currently at our other home at sea level so will give it another go!

This is a super easy recipe. It actually took 40 minutes to bake chicken properly. Very similar to Mediterranean chicken. As side dishes we had baked asparagus and radishes. Temperature was similar just took them out earlier. You can also put them in later.
This was just ok. It wasnโt terribly appealing to the eye, even though I did add the broiling at the end. I served with linguine tossed with Parmesan and Romano and black pepper, which upped the ante a bit. I am going to use the leftovers to make a casserole or stew.
