What kind of cocoa powder should I use?
This recipe is best suited for a dutch process cocoa powder. However, plain unsweetened cocoa powder will also work. Use dutch processed for best results. The quality of cocoa powder varies so we recommend staying away from inexpensive, generic brands as they tend to have the lowest quality when it comes to chocolate.

I just made this again for the second time…super easy. I made the cake the night before, I suggest using 8″ pan as the 9″ pan really makes the cake flat looking. I do the ganache the next morning. The cake looks like something you would purchase at a bakery. Company loves it because it’s flourless and it’s not super sweet. This is a winner folks.

This turned out excellent. Easy to put together and I love the ganache.
I used a mix of high quality 60% bittersweet chocolate chips & semi-sweet chips. 4 eggs instead of 3. 4 Tbs coconut oil and 4 Tbs butter. Baked until set about 5 minutes longer.
Finished the cake was smooth, creamy and Delicious.
