Can tomato avocado salad be made vegan?
Yes! This recipe is almost vegan already, only requiring that you substitute the honey with maple syrup to make it 100% vegan.

Cilantro Substitutions:
We highly recommend you use freshly chopped cilantro in this recipe. The flavor juts can’t be beat! If you don’t have access to fresh cilantro, you can always substitute with dried cilantro, parsley, or even basil!

Storage instructions:
You can store Tomato Avocado Salad in an airtight container in the fridge for up to 3 days. However, the avocado will start to brown when exposed to air, and does not mean that they have gone bad.

I had a very long day and didn’t want to make much for dinner, and this salad popped up on my feed. I had all the ingredients, so it was great timing. I used up the last of my energy chopping the veggies and was too tired to make the dressing so I used my favorite bottle of vinaigrette. It was perfect. A light and healthy dinner that was very filling.
Next time I’ll definitely make the dressing and maybe add a little chicken for extra protein. It kept really well for lunch the next day (just a little browning on the avocado, but the vinegar helped keep it from going super brown.) I’m definitely adding into my dinner rotation in the future.
