Tomato Paste Can Hack
Canned tomato paste is the best value, but can be annoying to use. If you open a tomato paste can from both ends, you can use one of the lids to push the paste through the other side of the can, which is so much easier than scraping it out with a spoon!

Boiling lasagna pasta sheets is an extra step that we would all love to avoid. No boil lasagna pasta sheets, in our opinion, have an unpleasant texture and often turn out soggy. Here is a hack to skip the boil and make perfect pasta every time: All you have to do is place regular lasagna pasta sheets in a container, like a 9 x 13 pan, and pour hot water over them. Let them soak for 30 minutes and theyโll be tender enough to use in the recipe. Donโt worry, they will finish cooking in the oven.

I made this for Christmas dinner after searching for a lasagne recipe that resembles one that my ex mother in law makes (she’s from Calabria). This one is it. The only changes I made were to add thinly sliced uncured pepperoni on top, and I accidentally used pecorino Romano instead of parmigiana. I typically prefer Romano anyway. This was delicious! This is the most amazing lasagna ever! Worth the effort. I followed the recipe exactly, except I omitted the sugar and nutmeg. I made it on a Thursday and baked it on Saturday for my in-laws, who are Italian. Everyone loved it! My 9×13 pan would not have been deep enough, so I bought a 2 3/4โ deep foil pan. Found this recipe after fruitless efforts to re-create my Italian grandmother’s dish. Comparing it to what was in my head I took a few liberties when doubling the recipe – used just a dash of sugar, used 50% more fennel seeds, used dried basil instead of fresh, eliminated the ricotta, nutmeg, and egg. Perfection! Hint: don’t skimp using generic parmesan, use genuine Parmesano-Reggiano and grate it yourself.

Have you thought of using meat substitute? I like Litelife Smart Grunds. Or, you can replace the meat with roasted vegetables like eggplant, squash (yellow or zucchini) or portobello mushrooms. I LOVE veggie lasagna. Just remember to roat the vegetables first so they have lots of flavor!
Can I make the sauce on Monday, store in fridge and put together on Thursday night to serve on Friday. Working mom so short on prep time with the holidays. Any suggestions?

I am making 2 pans as well.. what about cook time? I’m assuming it should take a little longer with 2 pans in the oven instead of 1.
Having more pans in the oven doesn’t change the temperature of the oven so the cook time is the same.
