Sweet Potato Casserole with marshmallows is to die for! Mashed sweet potatoes are mixed with brown sugar and butter then topped with mini marshmallows and baked until perfectly brown and gooey on top.
We have been in Thanksgiving planning mode a lot around here lately. Juicy turkey, mashed potatoes, rolls, pie, and the infamous sweet potato casserole. Not gonna lie, this is so good it should be considered dessert, but somehow we still get away with calling this a ‘vegetable side dishโ year after year.
Sweet potato casserole has a lot of variations out there, and this one is always a favorite. Is there really a wrong way to eat sweet potatoes, brown sugar, butter, and marshmallows though? We think not. Can we all agree not to tell the kids that sweet potatoes are healthy? Weโd like to get away with this for a few more years before they realize there is actual nutrition in this dish. What’s the difference between yams and sweet potatoes?
In the United States, the terms โSweet Potatoโ and โYamโ are used interchangeably and refer to that potato-looking thing with red skin and orange flesh. Yet, you have probably seen something else in the grocery store labeled sweet potato with light yellow skin, while your orange flesh variety is labeled yams. Guess what? Both of them are sweet potatoes! The kind of sweet potatoes you think of as yams are simply dark-skinned sweet potatoes. You wonโt commonly come across true yams in an American grocery store. True yams have brown or black skin and the flesh is either red, purple, or off-white.ย We prefer garnet sweet potatoes in our casserole, both for the flavor and the color! However, you can use either an orange or white flesh sweet potato.
Mini or Large Marshmallows in Sweet Potato Casserole:
Large marshmallows are just a bit too big for a sweet potato casserole and are difficult to eat and can also burn. We love the ratio of gooey center to crispy outside on the mini marshmallows, and recommend you stick to the mini variety. If you’ve only got large marshmallows and you are in a pinch, use clean kitchen scissors to snip them into smaller pieces for topping. Spraying the scissors with nonstick cooking spray will help with any sticking issues.
Can I use canned sweet potatoes/yams?
This recipe is written for raw sweet potatoes and we do highly recommend using them for the best flavor. If all you’ve got is canned, we can work with that! Simply skip the second step of the recipe where you boil your sweet potatoes. Instead, drain your canned yams thoroughly and proceed with mixing them in with the other ingredients and placing them into your casserole dish. You’ll need 1 1/2 to 2 pounds total, but you can always scale the recipe smaller if you need to.
Storage and Reheating Instructions:
Store any leftovers in the fridge for up to 4 days, and simply reheat in the microwave in 30-second increments until warmed through. If you want to reheat a large portion at one time, you can slip the entire casserole dish back into a preheated oven at 350 degrees Fahrenheit until warmed through.

Can I freeze this recipe ahead of thanksgiving and pull it out to thaw and then bake day of? 4 days before?
Yes! Add the marshmallows the day of baking and for sure add more time for it to bake.
I have been making this recipe for Thanksgiving and Christmas for the last 3 years since I’ve discovered the Stay at Home Chef. This is my favorite go-to sweet potato casserole. The only thing adaptation I make with this recipe is I bake my four whole sweet potatoes in the oven as regular baked sweet potatoes then I peel them then I mash them up and follow the rest recipe as directed. I like the rich caramel flavor that you get from real baked sweet potatoes. Also I would be concerned about boiling the potatoes and losing some of the nutrients via the boiling. Great recipe give it a try, my family and extended family enjoy this dish every holiday season! ๐งก
I have made this before and its delicious. how far in advance can you make it before thanksgiving?
2-3 days max and then add the marshmallows day of!
If I’m using canned sweet potatoes, is the 1 1/2 – 2 lb recommendation for a single preparation? If so, what do you recommend if I double the recipe?
The 2 pounds of sweet potatoes is for a single recipe. You would need 3 1/2-4 pounds of potatoes for a doubled recipe. There are many sizes of canned sweet potatoes but you will need about 60-70 ounces of drained sweet potatoes for a doubled recipe. Once again, it really depends on the canned sweet potato and how much liquid is added to it. The good thing about this recipe is, it doesn’t have to be an exact measurement on sweet potatoes!
My grandmother always made it and I make it almost every year, took one to Church supper and it was gone in minutes. Now prepping it again today to bake up tomorrow. Be sure to sit out a bit if itโs chilled since it will take longer to bake, then add marshmallow towards the end of baking. Sometimes add pecan pieces on top or mixed in.
I made it as yam is already on sale! Yes, very delicious!!! I reduced sugar to 4TBSP. Mashmallow didn’t get burnt! Perfect temprature! Yey!
I actually made three of your Thanksgiving Recipes for a dozen people and my family liked all of them. I made two kinds of Cranberry Sauce, Sweet Potato Casserole and Sausage Stuffing. Thanks for making video’s that are easy to follow. No more canned tube of cranberry sauce or boxed stuffing for our family hahaha.
Really really good. made 2 pans to friendsgiving dinner, all but half a pan was left! (it was one of the most eaten ๐ )
So easy & delicious! I added 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg & subbed the milk for heavy cream and they were over the top!!
