We love any excuse to grill. It just brings such a delicious flavor and texture to anything you cook on it. Who doesn’t love meat on a stick?ย One of our favorite parts about grilling is that it is so quick and easy. These kabobs are absolutely bursting with flavor. They have that zing from the citrus and vinegar, and just a touch of spice. Oh man, kabobsโฆdonโt mind us, weโre drooling over here. You will too. These babies are delish!
Ingredient Notes
- Top sirloin steaks: You can use a tenderloin or other cuts. The most important part is that the cubs are cut to a uniform size.
- Worcestershire sauce: Brings a bold flavor that enhances the beef.
- Soy sauce: Adds to the salt factor that enhances the meat.
- Rice vinegar: This brings a tangy flavor and works as a tenderizer to make the meat nice and tender.
- Lime: Brings a bright, citrus note to the flavor combination. Freshly squeezed lime juice is always best. However, you can substitute with store-bought lime juice in a pinch.
- Minced garlic: Measure with your heart. Garlic is just a natural pair with beef to bring a bold flavor.
- Ground ginger: This gives a little sweetness and just a hint of heat.
- Red pepper flakes: Brings the heat and adds a lovely little color.
- Cilantro: You will want to use fresh cilantro. The flavor simply can’t be beat, and dried cilantro just won’t produce the same result. If you donโt love cilantro you are welcome to not use it.
Steak Options
Sirloin is the most economical cut for a kabob. This is your all-purpose beef and will be a great choice. For the most tender option possible, you will want to go with a Filet Mignon (also known as tenderloin). These are my personal favorite. They will be super tender every time, even if you accidentally overcook them.
Other alternatives are the New York Strip and Ribeye. However, if you use Ribeye keep an eye out for any large chunks of fat in your bite-sized pieces.
Grill Alternative
While beef kabobs are traditionally grilled, you can also make kabobs on the stovetop using a grill pan or heavy skillet. Just like the grill, youโll preheat the skillet to high heat. Pan grill the kabobs in high heat until the meat is cooked through to the desired level of doneness, rotating every few minutes. Be careful not to crowd the pan.
Skewers
You can use either metal or bamboo skewers. If you are going to use bamboo, make sure to soak them in water for at least 30 minutes before using. If you use metal, be cautious and always use tongs or heat protection to handle them.
Internal Doneness
Checking the internal doneness of your meat is key to perfect grilling. Check out our complete guide How to Grill Steak Perfectly Every Time that gives you detailed instructions for delicious grilling every time. For medium-rare, you are looking for 130 degrees Fahrenheit.
Make it a Freezer Meal
You can make a freezer meal of the kabobs so they will be ready on the fly. Simply prepare the beef and freeze it in the marinade in a gallon sized resealable plastic freezer bag. When you are ready to make the kabobs, remove the frozen bag from the freezer and place it on a plate in your refrigerator overnight until thawed.
Storage and Reheating Instructions
Refrigerate in an airtight container for up to four days after you have removed the meat from the sticks.
Reheat by putting the meat cubes in a skillet with 1 tsp butter over low-medium heat. Toss until they reach the desired temperature.

After trying this recipe for marinade, I was not really into the sour and bitter tastes of the meat. Lime juice is decidedly better on seafood like shrimp kabobs but I think I’ll stick to soy sauce and red wine vinegar for red meat tenderizing. Also, some of the cilantro pieces made it onto the grill from the marinade. When it chars, I just found out it give a bitter flavor.
I use soy sauce,1/4cup, 1tbsp Oil, Garlic, 1 Tbsp vinegar, pepper! Itโs absolutely Delicious! ๐๐ป๐โค๏ธ
