You can buy a thick cut chop at almost any grocery, but you’ll probably have to ask for it. Just head on over to the meat counter and ask for a 1 1/2 to 2 inch thick cut pork chop. For newbieโs make sure to not burn your fingers. I pulled from oven hot skillet laid on counter and forgot and held handle and burned my fingers awful it hurts.
So sorry Colette, I’ve done that too, now when I take a hot pan from the oven I leave a oven mitt inside the handle to remind me that it’s hot

Just made this. You were so right about the flavor of the thick vs the thin. These chops had no bones but still delicious! I probably should have rubbed some olive oil into my cast iron pan because some of the crust got left there. Nevertheless, I will cook this again. Thank you.
