Canned tomatoes are a great option for making a quick and easy tomato soup. The tomatoes are preserved at fresh peakness so that you can enjoy them all year long. We prefer using a fire-roasted tomato for extra flavor.
Fresh tomatoes always have a great flavor, but do require more work. To fire-roast tomatoes, you can either use an outdoor grill or the oven. Whichever you decide, preheat to 450 degrees Fahrenheit. To prep your tomatoes, you will need to wash, cut off the stem end, and then cut tomatoes in half lengthwise. Place them cut side down into a grill basket for outdoor grill or on a baking sheet for the oven and drizzle with olive oil. Roast in your preheat grill/oven until charred. The grill will go fast, so keep a close eye on it. In the oven, it should take approximately 30-40 minutes to char. Allow them to cool before peeling and continuing with the recipe.

This is a great recipe you can make in literally about 30 minutes. I am vegan so for the cream I substituted 1/2 cup of cashews (pulling out 1 cup of the soup and purรฉeing the cashews with the soup in a high speed blender then returning to the soup pot. The cashews are a wonderful substitute Igor the cream.

This is one of the Simplest and best tasting Tomato Soups that I have tried . I have made Ina’s Tomato/Basil soup for years and my family loves it. This might be a great alternative. Very good with a sourdough cheese bread.
Absolutely wonderful in first try
This is delicious! I just made it because I’ve been craving tomato soup and it was very fast and easy to do. There is a slight kick to it from the fire roasted tomatoes, so if you’re afraid of any spiciness, you might want to adjust to regular diced tomatoes. But for me, it’s perfect! Thanks for the easy to follow recipe.
Have a similar recipe that I have made for years. Only difference is that I use crushed canned tomatoes. Sometimes, I add a bit more cream too. Love this recipe.
