Soup for the soul, anyone? For us, thereโs no such thing as too much soup, no matter what time of year. Even in the middle of summer, you can find us sweating it out, yet still thoroughly enjoying that bowl of delicious soup. What is it about sipping our entire meal with a spoon, that we just find so satisfying? Well, it is all about the sweet, creaminess of those sweet potatoes. You really donโt want to wait for the next stormy day, you need to make this tonight. Your family will thank you for it.
Sweet Potato vs. Yam:
In America the terms โSweet Potatoโ and โYamโ are used interchangeably and refer to that potato looking thing with the red skin and orange flesh. Yet, you have probably seen something else in the grocery store labeled sweet potato with a light yellow skin, while your orange flesh variety is labeled yams. Guess what? Both of them are sweet potatoes!
The kind of sweet potatoes you think of as yams are simply dark skinned sweet potatoes. You wonโt commonly come across true yams in an American grocery store. True yams have brown or black skin and the flesh is either red, purple, or off white. Crazy, huh? You thought youโve been eating yams all these years!
How many sweet potatoes are in 2 pounds?
Sweet potatoes naturally grow in a variety of shapes and sizes. We have found that it takes about 3 larger sweet potatoes to equal 2 pounds, or 6 medium to small sweet potatoes. It’s a good idea to use the scale in your grocery store to weigh out ingredients like sweet potatoes and potatoes.
Blender vs. Immersion Blender:
We are big fans of the immersion blender. Rather than handling hot liquid to get it into a blender, inevitably spilling, why not just blend in the pot? It seriously reduces our clean up time. If you donโt have an immersion blender, you can always carefully pour your soup into a blender fitted with a vented lid.
Is Simple Sweet Potato Soup vegetarian or vegan?
Simple sweet potato soup is indeed vegetarian, and almost vegan! To make this vegan, simply substitute the cheese with your favorite plant-based substitute.
Storage and Reheating Instructions:
Store any leftover soup in an airtight container in the refrigerator for up to 5 days. Reheat in a saucepan on the stovetop over medium low heat until warmed through.

Love the way you layer the flavors here, instead of blending them. Also, cauliflower and sweet potato are an interesting juxtaposition. Very creative! ๐
I really like soups like this with sweet potato or other orange veggies as the base. I would make a pot just for myself and eat it for lunch all week long. YUM!
