You can easily make this dish vegetarian by leaving out the chicken. If you want to make sure it is filling enough as the main meal, add an 8oz container of sliced and sautéd crimini or white button mushrooms.Â

I made it similar to the recipe, only I used mushrooms instead of chicken and added a can of cream of chicken/mushroom soup. Everyone loved it, including my picky son… Will be making again soon!

Comfort food galore! I made this last night and it was a hit for the whole family (especially my three teenaged boys who have voracious, and bottomless, appetites). I doubled the recipe to ensure there would be leftovers. I love to make a meal stretch into two – save myself some time. Because I doubled the recipe, I used my lasagna pan to bake the Cheesy Chicken Spaghetti and it fit perfectly (incidentally, I purchased the lasagna pan for the Stay at Home Chef’s Most Amazing Lasagna – it absolutely is amazing, and I’m glad I invested in the pan: it gets more use than I would have thought considering I never missed not having it before!). The flavors are spot on, the creaminess of the sauce is delish. Served with salad and garlic bread. This will be a regular!

I made this pasta dish this morning for the kids who are coming for lunch and a swim. I know they’ll gobble it up because it is SO GOOD! I especially like it because the baby loves Mac and cheese. This is way healthier than the junk you get in the store.
