Easy Lemon Herb Baked Chicken Breast is a quick and healthy meal that is oh, so delicious! It is perfect for busy weeknights, and everyone in the family will love it!
Chicken is perfect for a quick meal and healthy protein. It can be dressed up in so many different ways, and we have certainly gone about trying them all! We love this baked lemon herb recipe because it takes practically zero prep time, yet tastes like we spent hours in the kitchen. That slight tang from the lemon with the heat of lemon pepper mix beautifully together, and it is certainly a mystery how we could possibly get so much flavor out of such a simple recipe.
Juicy Chicken Tip:
The secret to a juicy baked chicken breast is to cook it at a high temperature, blasting it with heat over a short period of time. Use a meat thermometer for 100% accuracy to ensure you don’t over-bake and dry out the chicken.
Chicken Options:
Chicken thighs and drumsticks bake beautifully when prepared this way. All you’ll need to adjust is potentially the cooking time. No matter which cut of chicken you use, you’ll want to make sure it still reaches an internal temperature of 165 degrees Fahrenheit.
Lemon Slices in Easy Lemon Herb Baked Chicken Breast:
Not only do the lemons add amazing flavor to the chicken, but they taste amazing themselves. Try one and fall in love with the intense lemon flavor!
Make Ahead Instructions:
You can make the marinade up to 8 hours ahead. We like to start it in the morning so it can marinate all day, leaving us to simply put it in the oven to bake!
Storage and Reheating Instructions:
Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in an oven preheated to 350 degrees Fahrenheit until warmed through.

Easy and super tasty! Mine took closer to 30 min in the oven but I had large chicken breasts.
The chicken is so tender and moist, and the recipe is super simple!
This recipe was pretty tasty! Not going to lie, I was doubtful towards it because baked chicken breast always seems to come out dry without fail, but this recipe was not only delicious, but the chicken was also moist! I will admit though that out of my fear for dry chicken, I made shallow cuts into the chicken breast and slightly filled them with the marinade before baking (out of habit) and it was awesome! Will use again!
Ths recipe is restaurant quality! I pounded the chicken breasts before placing in bag with the marinade. I did bake the chicken
uncovered for 45 minutes at 350 degrees….absolutely delicious!
Served with homemade rice pilaf and green beans. The lemon juice and the lemon slices gave the chicken an exquisite taste…a meal worthy to serve guests when this pandemic is over! Thanks for the recipe…its a keeper!
Thanks for including the sides you served this with! I always struggle to find the right thing.
Delicious!!
I made tonight for my family and it was a hit!!!
I made it and it was delish! I added some rosemary as well. However, I baked it for 15 mins and then flipped it over and baked it for another 20 mins because it was a little pink inside.
The chicken was severely undercooked. My advice is to cook it an extra 20 minutes.
So I have been cooking mass chicken breast in this manner for years. Likely 8-16 a week, 4 at a time. I do 450F for 18 minutes exactly and they always come out perfect. The only one time this didn’t work for me was when I used a friends convection bake oven which doesn’t cook even close to the same. Is it possible this is what you were cooking your chicken in? If thats not the case, maybe put a thermometer in your oven to make sure its getting to the correct temp. Hope this helps. Have a great day!
Do you use a glass dish or metal cake pan? I used a glass dish and had the same issue as Nikki. Severely undercooked. I had to put them back in for another 20 min, then they were perfect!
From a chef I know he always baked his boneless skinless chicken at 400 degree for 20 minutes and it was always perfect
Maybe they use thicker chicken than you? I’m actually going to make it today for dinner. Hope it turns out well, fingers crossed.
Preheat your oven ahead of time before you prepare your chicken if you’re not doing this. Thank you.
My husband and I were in the same boat. We had to add another 20-30 minutes as well. This was on top of the oven being preheated to 450.
I made this chicken last week and it was really good. I accidentally didn’t save it and have been searching for it. I am thankful that I found it incredible so flavorful.
Thanks very simple and delicious
