Why Our Recipe
- Still has all the flavors you love from traditional banoffee pie with a couple of twists to take it to the next level.
- We’ve replaced the traditional biscuit crust with the most amazing honey shortbread crust that’ll have you wanting to make every pie with it.
- A layer of toffee adds a deliciously sweet crunch and makes the name of the pie even more fun to say!
Our delicious recipe is a spin on the classic Banoffee pie, which traditionally combines bananas and dulce de leche in a digestive biscuit (or graham cracker) crust. Our version replaces the traditional crust with our honey shortbread crust. It tastes like a graham cracker with the texture of a more traditional pastry pie crust. As if that wasn’t delicious enough, we’ve added toffee to bring another layer of deliciousness.
Ingredient Notes
- Bananas: Make sure your bananas are ripe but firm. We’re looking for solid yellow bananas that have not started to develop spots. Overripe bananas can become too mushy in the pie.
- Dulce de Leche: Can be found at your local grocery store often found down the International Food aisle near the Latin America section.
- Toffee Bits: Find these down the baking aisle near the chocolate chips.
- Heavy Cream: This may also be labeled as heavy cream or heavy whipping cream – either works fine.
Crust Options
This recipe features our homemade shortbread pie crust. However, you always have other options. You can go traditional with a homemade graham cracker crust or purchase a pre-made one. You can also opt for a classic pastry crust, or store-bought options such as roll-out pie crusts or a frozen pie shell. This recipe is designed for a standard 9-inch pie crust, so just be sure to bake the crust ahead of time according to the package instructions, as the filling doesn’t require baking.
Finishing Touches
For a gorgeous finish, spread the whipped cream evenly over the pie using a spatula or the back of a spoon. You can create smooth, elegant swirls or rustic peaks for a homemade look. Garnish with additional toffee bits or freshly grated chocolate shavings for an elegant look and added taste.
Storage Instructions
Refrigerate leftovers covering with aluminum foil or plastic wrap. It will stay fresh in the fridge for 3-4 days. Typically when you notice the bananas browning, the pie is no longer fresh.
