Used Bob’s 1-1 gluten free baking mix and it’s absolutely indestinguishable from regular flour pancakes. Very fluffy from all the baking powder. I added more liquid like everyone else, relaxxxx these are fantastic pancakes.

These were great! I subbed Krusteaz GF flour and they were wonderful.
Fantastic recipe! Premade pancake mix no more! I’ve made this twice. The first time I halved the recipe. It was WAY too thick, but nothing few tablespoons of milk couldn’t combat. My person stove top burnt them at medium high, so the second time I started over med heat, added just under 1 1/4 cups of milk (for the WHOLE batch. Didn’t half it this time). Per the recommendation of another commenter, I added a small splash (1/2 teaspoon or less) of almond extract. YUM! Made the pancakes very decadent. I also chose to use 1/3 cup of batter for nice, large pancakes, and the yield was 9 big pancakes. Between my two sons and I, we couldn’t even eat this many! These are so fluffy and filling. I’ve both sifted and not sifted the flour. Both times they were stunning. 100% a keeper recipe!
I made these pancakes this morning and I added an extra teaspoon of sugar, a teaspoon of pure vanilla & a dash of cinnamon and they taste so freaking delicious this is the best pancake recipe EVER 10/10
