I just happened to have buttermilk home and woke up to this recipe in my inbox. When I say these are the BEST pancakes – I kid you not they are freaking delicious!!! I put a little riff on them as I’m sure everyone does. I added a little vanilla, 1/4 c cornmeal, 1/4 cooked quinoa and a little chopped walnuts. I happened to have all this readily available. It still would be amazing without any riffs!! It’s the texture and flavor. I am 60 so I have made plenty of pancake recipes but this will be my go to recipe! Rachael, I’m not sure if I love you or hate you for this?! Just kiddding.. lol!!
