Coconut Rice is easy to make and the perfect side dish for so many different styles of meals. It has a mild coconut flavor, but it’s still delicious!

Rice cooked in coconut milk has a mild coconut flavor. It is slightly sweet, but only has a mild coconut flavor.
What kind of coconut milk should I use?
You can use either canned coconut milk or the kind of coconut milk that comes from a carton in the refrigerated section. Either will work. When using canned coconut milk, be sure to shake the can well before opening or stir the contents together after opening. There may be chunks, but don’t worry, that is normal. Simply pour everything from the can in with the rice, chunks and all.

Yes it can, but the steaming time on the rice will need to be increased significantly. Instead of 15 minutes, steam the rice with the lid on for 50 to 60 minutes.

Use any long grain white rice in this recipe. Avoid using specialty rices like arborrio or quick rices like instant rice. These kinds of rices require a different ratio of liquid to rice as well as different cooking times.

I made this today. Amazing! Easy recipe to follow.
I just made the Rice! It came out fantastic and tastes heavenly. My can of coconut milk was only 13.5 not 15 oz. (didn’t matter) I followed your instructions completely and OMG! the rice came out like your picture. I can’t stop taking spoonfuls while it is cooling. (Love my Carbs) Thank you, again.
I love this recipe, it’s easy and delicious! I teak it a little by sautรฉing finely chopped onion and garlic before adding the rice. This is a fav in our house.
I tried using my rice cooker. The rice is delicious BUT the boiling coconut milk led to it overflowing so I had to keep the lid cracked (and stay in the kitchen checking on it frequently).
Have you ever cooked this in a rice cooker and do you recommend doing so?
A rice cooker is simply an electric pot so it should work fine.
This is similar to a recipe I use, but I saute some fresh ginger for extra flavor. I tried this in an instant pot and it worked well .
What were times etc for instant pot
Thx
Instead of olive oil could you use coconut oil?
Yes, you can.
How do you adjust this recipe to use brown rice?
You simply need to increase simmering/steaming time to 50 minutes.
Think that using it in a rice cooker might be a bit more difficult, as they donโt specify temperature, and youโd have to manually guesstimate. But it does seem to be worth trying for those with such amenities.
Have you ever tried this in a rice cooker?
Nope, but it is worth a try!
