How do you make cupcakes extra fluffy?
This cupcake recipe is already quite fluffy. For an extra fluffy cupcake, separate your eggs. Add the yolks in to the batter and beat the egg whites separately. Fold the egg whites in with the finished batter for the ultimate fluffy cupcake.
How do you know if your cupcakes are done?
Gently tap the top off the cupcakes. If they feel springy and bounce back, they are done. If they jiggle, it means that the centers are not yet baked through. You can also use the toothpick test and stick a tooth pick into the center. If it comes out clean, your cupcakes are done.
How do you fill the inside of a cupcake?
Filled cupcakes are so delicious! If you want to add a filling to your cupcake, make the cupcakes according to the recipe. Once they are completely cooled, place your filling into a piping bag with a wide, open ended tip. Place the tip directly into the top of the cupcake and squeeze about 2 teaspoons of filling inside. If you try to add too much, your cupcake will split.
CUPCAKE BAKING TIPS:
- Do not over mix your batter. You should only mix it until the ingredients are just combined. Over mixing will develop the gluten in the recipe which will make your cake rise beautifully in the oven, and then fall as soon as it is removed.
- Keep the oven door closed! If you want to check on your cupcakes, simply peak through the window. Opening the door lets heat escape and lets cold air rush in. This creates uneven baking, especially with cupcakes.
- Bake cupcakes in the center of the oven for the most even distribution of heat.
- Remove the cupcakes from the pan immediately after removing from the oven and transfer to a wire rack to cool. Letting them stay in the pan will continue baking the cupcakes and could dry out your cupcakes.
- Store cooled, frosted cupcakes in an airtight container to keep them from drying out.

I just tried this for the first time, and I have to say these are the best vanilla cupcakes Iโve ever had, let alone made. Growing up my grandmother made a depression era chocolate cupcake called wacky cake and these are a very similar vanilla version. The buttermilk adds just the right amount of tang to a sweet vanilla flavor!

Hey can i substitue the butter for shortening?
I was going to replace the flour with gf, butter with sjortening,and apple sauce for eggs.
You would end up with a very different cupcake.
I made these for the first time today. I am very happy with the results. I used cake flour instead of all purpose and I whipped the egg whites separately (as you mentioned above for fluffier cupcakes), and folded them in at the end. I feel these are one of the best recipes for cupcakes that I have tried, and as a baker, I have tried many! Thanks for a great recipe.
I GF kind my new go to cupcake recipe. This is the best cupcake recipe.The cupcakes were very light and airy. I definitely recommend this recipe for any occasion. You might want to double the recipe if you want more batter. It made 15 cupcake for me.

I first found your chocolate cupcakes recipe, so I figured I’d make the vanilla ones as well! I was asked to make the cupcakes for my niece’s 6th birthday party and as long as this bronchitis goes away, hopefully I still can! I only have unsalted butter. Will that be ok? Any modifications if I do use unsalted butter? My niece has been asking for pink and blue icing for months so I am making a simple buttercream, half I’ll dye pink, half blue and pipe it in a swirl.

I wanted your advice on this please. If I make the Cupcake batter for 24 cupcakes but as I have only 12 liner tray. Is there any way I can store my batter for 30 minutes till one tray is baked
Yes, just leave it at room temperature while the first tray bakes.
