Ingredient Notes
- Pork Roast: Either pork butt or shoulder works great here. These cuts have enough fat to make the meat super tender and flavorful. You can typically find them labeled as โpork shoulderโ or โBoston buttโ in the meat section.
- Vegetable Oil: This helps give the pork a nice sear in the oven. You can substitute with canola oil or olive oil.
- Apple Juice: The apple juice adds a subtle sweetness and a touch of acidity.
- Rosemary: A fresh sprig of rosemary adds an earthy, aromatic flavor. If you donโt have fresh rosemary, you can use 1 teaspoon of dried rosemary instead.
- Onions, Carrots, Potatoes: These classic veggies are a perfect pairing for pork roast. Baby carrots are convenient, but regular carrots cut into large chunks will also work. For potatoes, baby reds or Yukon Golds will both work.
Roasting Uncovered
Leaving the pork roast uncovered is key to achieving that perfect texture and flavor. The pork butt or shoulder has a generous amount of fat, which needs to render down and baste the meat as it cooks. If you cover the roast, it traps steam, leading to a softer, more braised textureโgood for some dishes, but not this one! Slow Cooker Option
For those busy days when you want to set it and forget it, the slow cooker is the perfect option for this pork roast. Follow the same steps for seasoning the roast as in the original recipe, rubbing it with oil and the spice mixture. Instead of roasting it in the oven, place the seasoned pork directly into your slow cooker. Add the onions, carrots, potatoes, apple juice, and rosemary around the meat.
Cook on low for 8 hours, or until the pork is fork-tender and the vegetables are soft. The slow, steady heat allows the pork to break down perfectly, giving you melt-in-your-mouth meat with minimal effort. Just like the oven version, the apple juice adds a subtle sweetness that makes the flavors pop!
Storage & Reheating Instructions
Refrigerate leftovers in an airtight container for up to 3 days.
Freeze leftover shredded the pork and place it in a freezer-safe container along with the vegetables and juices. Freeze for up to 3 months. When you’re ready to eat, thaw overnight in the refrigerator.
Reheat in the oven at 350ยฐF. Place the pork and vegetables in an oven-safe dish, cover with foil, and heat for 15-20 minutes, or until warmed through.
Reheat in the microwave by placing the pork and veggies in a microwave-safe dish. Microwave on high in 30-second increments, stirring in between, until heated evenly.

Great recipe!! I did make revisionsโฆ I had an 8lb pork butt. Because youโre cooking this at 450* for the first 45mins, you really donโt need to sear it (which I was happy about b/c it makes my stove a greasy mess) – it adds a nice crust in the oven. Then dropped to 350* for another hour. I removed the grease before adding my veggies. Also did 1 cup chicken broth plus the 2 cups of apple juice. The apple juice adds a nice touch of sweetness to the meat which was FANTASTIC. I minced the fresh rosemary over all the veggies & meat and added more of ALL the seasonings to the vegetables.
After adding a TON of carrots, potatoes and onions, I did 1 more hour uncovered at 350*, then dropped to 325* & covered it, for 2 additional hours. I really didnโt want it to dry out. So, nearly 5 hours total but totally worth it.
Meat was falling off the bone, veggies were well cooked and not dry. Plenty of liquid left if you wanted to make a gravy. Family went nuts over it, including the picky-eater son. It was so good. Go get the apple juice if you donโt have itโฆ that really made it. Will definitely add this to my rotation!

Absolutely a fabulous recipe. I used a pork cut that always comes out dry and this roast was just delicious. It smelled wonderful in the house while the roast was cooking. One of the easiest and best pork roast recipes that I have ever run across. Wondering if this spice rub would work with a lamb roast.

Wow. It was amazing. I did make 2 alterations . Did sear meat in pan. I didn’t have any apple juice so I used ginger ale.
This recipe was absolutely delicious. The only tweaks I did was because my roast was larger 7lbs. So, I added 1/2 of the original seasonings. For example if it said 2tsp. I put 3 tsp. If 1tsp. I used 11/2tsp. I also cooked it for 5 hours. It was absolutely perfect.
My family really liked this recipe. I typically make a beef pot roast but I had a pork roast that I needed to use. Turned out great. The spices and apple juice really complement the roast. I did the crockpot method and cut russet potatoes into bite chunks.
Great recipe ! Iโll be using this recipe when I make a pork roast . Followed it pretty close I didnโt put potatoโs in the pot . Just boiled them for mashing . Had diet apple juice and it worked good . Saved calories too , LOL !
