Ingredient Notes
- Pork Roast: Either pork butt or shoulder works great here. These cuts have enough fat to make the meat super tender and flavorful. You can typically find them labeled as โpork shoulderโ or โBoston buttโ in the meat section.
- Vegetable Oil: This helps give the pork a nice sear in the oven. You can substitute with canola oil or olive oil.
- Apple Juice: The apple juice adds a subtle sweetness and a touch of acidity.
- Rosemary: A fresh sprig of rosemary adds an earthy, aromatic flavor. If you donโt have fresh rosemary, you can use 1 teaspoon of dried rosemary instead.
- Onions, Carrots, Potatoes: These classic veggies are a perfect pairing for pork roast. Baby carrots are convenient, but regular carrots cut into large chunks will also work. For potatoes, baby reds or Yukon Golds will both work.
Roasting Uncovered
Leaving the pork roast uncovered is key to achieving that perfect texture and flavor. The pork butt or shoulder has a generous amount of fat, which needs to render down and baste the meat as it cooks. If you cover the roast, it traps steam, leading to a softer, more braised textureโgood for some dishes, but not this one! For those busy days when you want to set it and forget it, the slow cooker is the perfect option for this pork roast. Follow the same steps for seasoning the roast as in the original recipe, rubbing it with oil and the spice mixture. Instead of roasting it in the oven, place the seasoned pork directly into your slow cooker. Add the onions, carrots, potatoes, apple juice, and rosemary around the meat.
Cook on low for 8 hours, or until the pork is fork-tender and the vegetables are soft. The slow, steady heat allows the pork to break down perfectly, giving you melt-in-your-mouth meat with minimal effort. Just like the oven version, the apple juice adds a subtle sweetness that makes the flavors pop!
Storage & Reheating Instructions
Refrigerate leftovers in an airtight container for up to 3 days.
Freeze leftover shredded the pork and place it in a freezer-safe container along with the vegetables and juices. Freeze for up to 3 months. When you’re ready to eat, thaw overnight in the refrigerator.
Reheat in the oven at 350ยฐF. Place the pork and vegetables in an oven-safe dish, cover with foil, and heat for 15-20 minutes, or until warmed through.
Reheat in the microwave by placing the pork and veggies in a microwave-safe dish. Microwave on high in 30-second increments, stirring in between, until heated evenly.

This could have gone wrong in so many ways – but it didnโt! Had a big pork loin – made the rub; chopped the veggies and decided Iโd better do 350 instead of 450 degrees. Didnโt add the apple juice (missed it); added 1 cup beef broth and cooked for 1 hr then tented with foil for another hour. This was absolutely the best pork loin Iโve ever had. Hubs commented that as well. Keeper! Thanks!!
I didn’t have enough time to do the 3 hours called for (1 in the middle) but did it anyway and it was delicious. Probably not as tearable as if I cooked it the 3 hours, but still well cooked and yummy
Looks delicious. I am currently with no oven. Has anyone done this stovetop OR in the crockpot? I saw the crockpot instructions but wondered how it actually turned out.

You can make this recipe in a small stock pot. To get the same effect as the oven you will have to Brown the roast on all sides with a little bit of oil before adding a liquid to finish cooking the meat till it’s tender. Your vegetables will still be boiled like a stew unless you put them in a separate pan and also Brown them.
I prefer roasts on the stove rather than in the oven. They have been more moist to me!

Made this for family dinner yesterday. It was easy and delicious. Did not have apple juice on hand so substituted 2 cups of beef broth. Should have maybe taken off some of the fat in pan before thickening the gravy but my family didn’t mind. Flavor of meat was amazing!

Made this recipe for Monday night dinner. I made a couple of additions, I added a 1/4 cup of apple cider vinegar to the apple juice to give it a little schnitzel taste. You can’t have too much rosemary or garlic in my opinion. I partially covered my Dutch oven while cooking the vegetables so they didn’t dry out but didn’t completely close the lid. I also added a tablespoon of Worcestershire sauce to the drippings along with chicken broth and thickened with a little corn flour. I served this with fried apples with brown sugar, cinnamon, a touch of ginger and a teaspoon of vanilla. It got all eaten up. Nice pandemic dinner for a Monday night.
Iโm looking forward to trying this recipe. However, I only have russets so thatโs what Iโm going to use along side carrot and rutabaga. Also I want to make a gravy so Iโm going to swap the apple juice for chicken stock and a table spoon or two of tomato paste! I hope itโs as good as this recipe!

Seal in the juices before I put it in a crockpot
I always brown both sides of whatever roast I am putting in the crockpot before I put it there. This helps to seal in the juices, open up the flavor of seasonings (especially dried herbs), and gives a nice start to the cooking process. I have found it works well with both beef and pork roast. This time, I tried the exact recipe in a roasting pan and the entire house has been filled with amazing aromas! Can’t wait until it is done!

I just finished eating this tasty dish. I added some sweet potatoes in a long with red potatoes and they tasted yummy. The apple juice gave it a bit of sweetness. The family enjoyed eating this & we will be having it, again. I might just try the 1/2 apple & broth next time. I will make some fried apples tomorrow with my left overs!!
