While this Super Easy Olive Oil Pasta shares some similarities with the classic Italian dish Aglio e Olio, they are not quite the same. Aglio e Olio, a staple in Italian cuisine, is known for its minimalistic approach, primarily featuring garlic (aglio) and oil (olio), often with a sprinkle of parsley and a kick of red pepper flakes. Our recipe, on the other hand, offers more flexibility and is designed for adaptability with the addition of various proteins and vegetables.
Ingredient Breakdown and Substitutes
- Spaghetti: The base of our dish, though any shape of pasta can be used. Gluten-free pastas can also be used.
- Salt: Essential for flavoring the pasta water and the dish. If you’re watching your sodium intake, reduce the amount or use a salt substitute.
- Extra-Virgin Olive Oil: Offers a rich and fruity flavor. For a milder taste, use light olive oil, or in a pinch, you can use avocado oil.
- Garlic Cloves: They add a pungent, aromatic flavor. If fresh garlic isnโt available, garlic powder can be used; about 1/8 teaspoon per clove as a general guide.
- Red Pepper Flakes: Provides a hint of heat. For less spice, reduce the amount, or for a different flavor profile, try a pinch of smoked paprika.
- Lemon Juice: Adds a bright, acidic note. If you don’t have fresh lemons, bottled lemon juice works, or a dash of white vinegar can be a good substitute.
- Fresh Parsley: Brings freshness and color. In its absence, dried parsley can be used, or try basil for a different herbaceous note.

This recipe needs a high-end olive oil, as it makes a huge difference in the final flavor. Olive oil is the featured flavor here and you need one that is quality. It’ll make all the difference so be sure to use a good one. Be sure to use an extra virgin olive oil for best flavor.
Storage and Reheating Instructions:
To store your pasta, let it cool to room temperature, then place it in an airtight container and refrigerate for up to 3-4 days.
In the microwave, sprinkle the pasta with a bit of water, cover, and heat on medium for 1-2 minutes, stirring halfway.
On the stovetop, warm the pasta over medium heat, adding a dash of olive oil or water to keep it moist, and stir until evenly heated, about 3-5 minutes.

Pasta Aglio e Olio. I added sliced grape tomatoes in halves and thirds to the garlic when frying. Topped it with parmesan along with the parsley. Delicioso.

This was wonderful! I served it with large, peeled and deveined boiled shrimp. I did cut back on the red pepper flakes. We’re not big on spicy flavors..a quick and easy pasta.
This was a hit with my husband. I thought it would be too spicy since I don’t have a spicy palate but the heat was just right. Going on our meal rotation for sure!
So delicious! No leftovers either!
