This Carrot Soup is so full of flavor it may very well become your new favorite soup! Who knew carrot soup could be THIS GOOD!?!
We know what youโre all thinking โ pureed carrots?! Trust us, you need to keep reading. You see, this recipe was inspired by Chef Jamie Laurenโs recipe from Top Chef Season 5, Episode 9. She made a carrot soup that blew the judges away! The judges were wowed by a carrot soup and surprised even themselves when they said it was the best soup they had ever had. We needed to have that soup. This recipe is for just the soup base which is a standout all by itself.
Shallots:
This recipe calls for shallots in addition to a regular white onion. Shallots are a smaller member of the onion family that have a sweeter and more mild taste, as if onion and garlic had a baby. You can always leave the shallots out, but they really do add a wonderful bit of flavor. You could always try using a sweet onion instead of the white onion as another option.
Can I use baby carrots in Creamy Carrot Soup?
While you definitely can substitute in baby carrots, you will still want to chop them up into smaller pieces for faster cooking.
Heavy Cream Substitute:
We love the richness heavy creams gives this soup, but if you are looking for a lighter option, you can always use half and half instead. Half and half is simply half whole milk and half heavy cream.
Blending:
We prefer to use an immersion blender to puree this soup, rather than have a messy transfer to a blender. If you do intend to use a blender, please ensure yours has a vented lid for safety.
Storage and Reheating Instructions:
Carrot soup is best eaten fresh. You can store any leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a saucepan on the stovetop over medium-low heat until warmed through.

This soup is spicy!
This soup is so good I have made it four times in the past month! I was afraid of using the Thai Red Curry Paste, but it did enhance the flavor. Thank you for your wonderful recipes!
I work in a Seniors Home and finding interesting dishes for them can be tough. The first time I made this creamy carrot soup the Residents were extremely hesitant only wanting a small serving. Well Iโll be darned if it isnโt their favourite soup! Every Sunday that is the soup I MUST make otherwise there is an uproar.
It isnโt often we are able to get shallots so I will use red onions if they are available otherwise itโs just your everyday regular onion. Likewise with the red curry paste. That is hard to come by living in a very small town so I often will start out with a tsp powdered ginger and add more to get the desired taste.
Other than those two tweaks that are sometimes necessary this is the best soup ever, and I serve some awfully picky eaters, bless their souls ๐

I literally just made this and it is delicious. Have to admit I was a bit nervous to use the red curry paste, but wow does it make the dish!! I will definitely make again.
I misread the recipe and accidentally added 2 TABLESPOONS of the curry paste, but I’m happy to report that the soup was still absolutely delicious! Not at all spicy. My husband loved it, too. I used my Vitamix and left just a hint of texture to it. Can’t wait to make it again (with strict adherence to the recipe ๐)!

Really well crafted soup. Curry paste adds a good depth. This is actually the only carrot soup recipe i have found online that ive really enjoyed and use frequently. It’s not a babyfood goup soup, its a real creamy nice soup.
Really good! However, since I live in Japan the red curry paste is very hard to find. So two tablespoon of sweet chili sauce is a very good alternative.
