Chocolate Marshmallow Chubbies are a cross between a brownie and a cookie and are full of ooey gooey chocolate marshmallow deliciousness!
The inspiration for this recipe actually came from one of my favorite TV shows…..The Goldbergs. It’s about a family set in 1980 something and it’s hilarious. In one of the episodes, they mentioned Chocolate Marshmallow Chubbies as being their family’s favorite cookie. Of course, I immediately went online only to not find a recipe! I knew I had to set out to create my own. It took quite a few rounds of testing to get this cookie just right. It’s like a cookie, but with the texture of a fudgey brownie, with bits of melted chocolate and marshmallow mixed throughout. It’s absolutely heavenly!
How do I make my cookies thick and tall?
For a taller cookie, you’ll want to cool off the dough and let the butter in it harden up before baking. You can bake them immediately, but they will spread out and be a thinner cookie. For best results, take the time to chill the cookie before baking.
How can I keep my marshmallows from spreading too much in the cookie?
You can freeze your marshmallows! This will keep them from spreading and melting in the cookie too much. Pull them out of the freezer just before placing into the dough. If you choose to freeze your marshmallows, spread them out on a small tray or plate rather than freezing them all in a clump.

I make these all the time and my kids just love them! Thank you for sharing this recipe. Can I make the batter with the marshmallows and freeze balls individually to bake later? Iโd like to get all the prep work done for some family visiting and was hoping to bake these fresh for them.
We are Huge Goldberg fans and googled this cookie while watching the show. My daughter and I had the best time making them. Any mistake we made weโd lovingly call each other moron. So much fun. And they are delicious. Giving them out to neighbors for the holidays. Thank you for sharing the recipe. It will be a new family favorite to serve beside my shrimp parm.

We love the Goldbergs and were looking for this recipe after seeing the episode, too! Thanks for figuring it out! We had fun making the cookies. I didnโt freeze the marshmallows first, but made all the dough balls and put them in the freezer before we baked. So the last batch was in the freezer longer than the first batch. Didnโt seem to make much difference. I did notice that if we left them baking longer the marshmallows melted out and browned up, which wasnโt so bad but wasnโt as pretty as your pictures. Leaving them on the baking sheet a bit was very helpful in getting them off whole. Thanks again!
Made these today! They are delicious. I would suggest you ensure the marshmallows are well frozen, and I would suggest having the cookies in the freezer for longer than 30 mins. I froze my second batch for close to 60mins & the cookies turned out better. They โsetโ better, were not as โgooeyโ and easier to get off the baking sheet. Also be aware the dough is very thick – but my cookie scoop worked well before forming balls. But as I said, delicious! Excellent for those chocolate/sweet cravings!
