These cookies look so fancy and impressive, but guess what? They only require a handful of ingredients and are super easy to make. You’ve got to love that! On top of all that, they are also super tasty. These are great for a tea party, baby shower, brunch, or just for a regular old treat. Weโve dipped these cookies in melted chocolate, but you also don’t have to dip them in chocolate at all. It adds a fun and fancy finishing touch and a higher chocolate content, but you can also have these cookies plain as well.
Do I need a stand mixer to make Chocolate Chip Shortbread Cookies
You will need either a hand mixer or a stand mixer for this recipe to adequate beat together the butter and powdered sugar.
Chocolate Chips:
We love adding chocolate chips to our shortbread cookies, but you can always make a plain shortbread cookie without them.
Can I use cookie cutters?
These cookies hold their shape which means you can cut them in squares or rectangles as shown, or you can use cookie cutters to come up with your own shape. Smaller cookie cutters may require a slightly shorter cooking time so be sure to watch them closely.

*****by far, my new all time favorite cookie. Love shortbread cookies. Even though Iโm a life long baker I have never tried baking shortbread cookies. Watched video first then followed recipe as printed. Excellent! Only thing changed is oven time. After checking a few times my total bake time was 29 minutes on the middle rack in my gas oven. Canโt wait to share with family and friends๐

Relatively easy to make and delicious. I didnโt have mini chocolate chips, so I chopped up regular ones. It doesnโt specify what kind of chocolate to dip them in, so I did bittersweet, which worked out nicely. The baking time was off, they baked for probably 25 minutes. I kept a close eye on them and took them out when they just started to brown on the edges, as the recipe specified. The result was a cookie that was delicate and chocolatey, with a wonderful buttery finish. I am bringing them into my office tomorrow and Iโm sure that they will go over very well.

I LOVE this recipe!!! Has become a staple Christmas cookie now. Itโs easy and looks beautiful on a plate. Make great gifts too. I doubled the recipe and refrigerated the dough so that I could make fresh cookies thru the season. I also cut them into triangles and rectangles just to make them even prettier. Enjoy!!! As the shortbread is made with icing sugar they are very fragile and snap easy – you have to be very delicate when dipping into the chocolate but the taste is good.
I just made these and they are awesome! I wanted them with my morning coffee, so I left out chocolate chips and dusted half of them with powder sugar. The other half, I drizzled them with white icing.
I’ll be making these over and over again! and add the chocolate chips๐
