Do you guys ever have breakfast for dinner? Because we have breakfast for dinner all the time. I like to keep things interesting and I’m always switching things up. This recipe is the product of my kitchen experimentation. Back in 2013 I decided to do something a little different by making waffles. And thus my greek yogurt waffles were born. It makes me feel better when I lather my waffle with syrup to know that there is a redeeming quality in there somewhere.
I already know what one of your questions will be. And, yes, you can make these with whole wheat flour. They won’t be as fluffy, but it definitely works. It’s a good way to get your whole grains in.
Now I would be remiss if I didn’t mention that I have the most amazing syrup recipe your tastebuds have ever experienced. I call it Liquid Cinnamon Roll Syrup and it is unbelievably delicious. My family can’t get enough of it and we prefer it over any other syrup you could possibly offer us. It is unreal. And dangerous, very dangerous. Syrup will never be the same for you ever again should you choose to try it. Serve it up alongside some candied bacon and I may be banging down your door for a place at your table.
Wonder how you can enjoy this goodness every morning without any hassle? This batter can be stored in an airtight container in the fridge for about a week, making breakfast a snap! Just stir a bit before using.

These were great! Followed the recipe but added some vanilla at the end and put chocolate chips in some of them. Will definitely make these again. Love that they have some protein and use honey instead of sugar.
What percentage of milk do you use? Or does it matter? I drink 1% and don’t like to buy something I’m not going to use
1% will work fine
Thank you for this recipe! Another comment asked about oat flour, so I tried it with a cup of quick oats blended and a cup of flour. They turned out great! For added fluffiness I a used an extra egg white, whisked until stiff peaks formed and folded it in just before cooking.
These are great! I substituted 1/2 cup protein powder for 1/2 cup flour and almond milk for the milk and Splenda for the honey. Kids never knew the difference and they have only 139 calories each, plus 9g of protein. Loved them, thanks so much for the recipe.

I made the batter for these waffles this morning for brunch and they really turned out wonderfully! I did one thing different though… I did not make them into waffles! I made them pancakes instead. I could not get to my Waffle iron as it was up on a top shelf and I was unable to reach it since I am confined to a wheelchair and no one else was around to help. I figured, why not try them as pancakes? So I did… And they were delicious! A really good flavor and they did fluff up nicely, but they were a little more dense or maybe moist than a usual pancake would be. I didn’t mind though, I just really love them so much. I did add extra cinnamon as I like a lot of cinnamon in my recipes. I warmed up a little extra honey to make it thinner inconsistency and drizzled that on top instead of syrup… What a treat! Both my son and his girlfriend enjoyed them very much so as well. I think this is going to become a staple in this house, however next time I do want to use whole wheat flour instead of all white flower. Thank you so much for sharing this recipe with us.

It would need adaptations to make great pancakes.
Made these today for Sunday Brunch. We absolutely loved them. We topped them with a little maple syrup and fresh fruit. Will definitely make them again.
