The quality of cocoa powder varies so we recommend staying away from inexpensive, generic brands as they tend to have the lowest quality when it comes to chocolate.

Today I made the way I normally do but it didnt turn out. It came out as if it was wet sand could you help with this. I notice I had it on lower rack and I didnt use a mixer today would any of those do it.
Just wanted to say, this works AWESOME for 12 cupcakes! The batter divided perfectly into 12 muffin cups and I baked em at 370F in our convection oven for 23 minutes. Doubled the ganache recipe and then cooled it down and whipped it for generous โfrostingโ piped on. These were such a hit at the birthday party I took em to!

For the ganache, I used a boxed carton of whipped cream they carry on the shelve. (Not refrigerated, liquid boxed cream from Trader JoeโS you can whip) turned out Terrific also.
