This recipe is best suited for a dutch process cocoa powder. However, plain unsweetened cocoa powder will also work. Use dutch processed for best results. The quality of cocoa powder varies so we recommend staying away from inexpensive, generic brands as they tend to have the lowest quality when it comes to chocolate.

I had tried a flourless cake before and it didn’t work. This one: OMG! Very easy and the result was amazing! I used heavy whipping cream and name brand baking cocoa and the ganache held firm. Next time, and there will be a next time, I’ll opt for a higher quality (higher fat content) cocoa. So as not to worry about turning out the cake from the pan, I used a 9-inch spring form cheesecake pan.
