You have the absolute best bran muffin recipe on earth! They are so good that I even got my husband hooked on them, which is a miracle! You are correct about the coconut oil, what a huge difference it makes to the texture and the flavor. I like to add raisins and a few diced dates to mine. Super delicious. I think I will add about 1/2 cup of prepared mincemeat in the next batch, for a taste of the holidays.

These were in fact the best bran muffins I have ever had. I added chopped up dates to the batter and that made them even more moist. Will not use any other recipe.
This is such a yummy recipe! After making it multiple times, I keep decreasing the sugar down to 1/2 cup and adding in dried cranberries. So flexible and easy to customize per your tastes!
Found this recipe here a couple years ago. Tried it – loved it. Perfect as it is, but easy to add or modify ingredients to suit your preference. I make it about once per month.
I couldn’t find All Bran ANYWHERE so I had to substitute Fiber One. Otherwise, I followed the recipe ingredients exactly, just mixed the dry ingredients together first before combining them with the wet. The second part of baking (350) took 8 minutes. Result: delicious, lightly sweet, decently moist bran muffins! Will definitely make these again!!!
Youโre right coconut oil and buttermilk makes a great muffin. I also put in a rounded cup of soaked raisins and a little cinnamon in flour mixture. Now these muffins are super great!!!
Texture is good, but a little too much of a coconut oil taste and mouth feel. I think Iโll look for a less oily recipe.
