What does baking powder do for chicken wings?
You definitely don’t want to skimp on this one. Baking powder is an essential ingredient in crispy baked chicken wings. Baking powder raises the pH of the chicken, breaks down the peptide bonds in the skin, and with that, makes the skin more crispy. Science, y’all!

Fresh vs. Frozen Wings
We prefer to always use fresh wings, however, we know how convenient it is to keep a bag of frozen wings on hand at all times. If you’re going to use frozen wings, let them thaw in the fridge overnight before baking, and make sure to pat them dry really well. You don’t want that extra water content

What to serve with chicken wings:
Traditionally, you would want carrot sticks and celery on the side, and we are not ones to mess with tradition. There is also a hot debate on ranch vs bleu cheese as a dipping sauce. Whichever you prefer, we won’t judge.

Short on time? Try our “cheater” method:
If you are short on time making refrigeration for 12-24 hours impossible, we’ve got you covered. You can bake that at a super low temperature to dry them out before then blasting them with heat to finish cooking through.
So, rather than refrigerating your wings at all, preheat your oven to 250 degrees Fahrenheit and bake for approximately 45 minutes – 1 hour. At that point, remove your wings from the oven, and increase the oven temperature to 425 degrees. Once it is at temperature, add your wings back in and bake for an additional 30-45 minutes, following the standard baking time suggested in the recipe, or until your wings are to an internal temperature of 165 degrees Fahrenheit.

You have the best recipes! Thank you
Made these for the first time – followed recipe but did the “cheat”. I put the prepped wings in the fridge for about 6 hours and then heated in 250 oven for 30 minutes. Finished at 425 for 30 minutes. I couldn’t fit them all in the pan, so I tried the air fryer for a dozen wings (18 minutes at 390) and they were crispy & delicious! Buffalo sauce was requested but also tried honey mustard (different but good). This recipe is a keeper.
I have a similar recipe to this and it uses 1 teaspoon of baking powder per pound of wings, which is about the same as this recipe. Wings bake up so crispy! Just saying in case people want to bake more or less wings.
I would suggest turning the wings halfway through the second bake, the sides facing the rack don’t crisp up.
These wings are “the bomb,” according to my daughter. We were together for our weekly dinner, and we enjoy trying new recipes. The wings were very easy to make. We used the short-cut baking method. They were crispy and delicious! Be sure you have the right baking powder. It truly makes all the difference. I’m not a terrific cook, but Rachel makes her recipes very easy to follow and achieve success. I’m grateful. We’ll be making this again soon!
Nearly every single post by this chef is saved on my channel! These are mostly “simple and fast” recipes that are always delicious!
👋🏻 Rachel, I made these today and they were DELISH. I will go the full 45 minutes next time since some had soft spots but other than that these wings with ALL the sauces are a 100% a keeper.
Does it matter if I only refrigerate for a couple of hours?
Yes, you definitely want to refrigerate for the entire recommended time. If you are short on time, try this cheater method!: Rather than refrigerating your wings at all, preheat your oven to 250 degrees Fahrenheit and bake for approximately 45 minutes – 1 hour.
Love the cheater method. It works every time. This recipe is the only way I’ve ever gotten crispy wings.
These were the best wings! I will always make my wings this way!! Thank you!
For some reason, and I checked oven temp, and followed recipe exactly – wings were not very crispy. Had to broil an extra 3 to 4 minutes. Parmesan/Garlic Sauce was very good.
Has anyone made with chicken breast?
I cannot tell you how much I adore you! I follow you wherever I can and cook at least 3 of your recipes a week (sometimes with a few changes)! You are the best! Thank you.
I’ve made these several times and each time did a different sauce. I don’t have a favorite sauce. I love them all. They are so easy and so good.
I made the wings with the cheaters method. They turned out great. I divided our wings to try different sauces. I made the garlic Parmesan and the honey garlic. I used bottled BBQ and teriyaki. Our favorite was the honey garlic! Yum! I am making them again tonight. Can’t wait to eat them!
