Soup season has arrived and we are here for it! Stews are just our favorite soup’s heartier cousin. We love them both, but as the weather turns cold, we need stew. It provides all the nourishing warmth of regular soup, yet it is filling enough to be a meal all by itself. However, that doesn’t stop us from serving it with our favorite french bread. No one gets between us and our love for bread! Join us in settling into this cold weather season and sipping on soups for every meal!
Chicken Options for Old Fashioned Chicken Stew:
We love the ease of using boneless skinless chicken breasts, but you can always use thighs or even a pre-cooked shredded rotisserie chicken.
Herbs:
If you would like to use fresh herbs, you can always substitute those in. You will want to increase the amount used to approximately 1 tablespoon each.
Cornstarch Substitute:
If you would prefer a creamier stew, you can add in 1 cup of heavy cream instead of the cornstarch slurry.
Make-Ahead and Reheating Instructions:
You can always make your stew up to 24 hours ahead of time. Simply store in the fridge and reheat in a saucepan over medium-low heat until warmed through.
Storage Instructions:
Store any leftovers in an airtight container in the fridge for up to 5 days.

I’ll make it again without the herbs, which we didn’t like. I’ll use chicken stock instead of broth to make up for that a little. I opted for thickening with water and cornstarch, instead of using cream, and it worked well.
I am making this tonight for dinner. With the Pineapple express heading to the Sacramento Valley – it will be fantastic. I am making one change and that is changing the corn starch to potato starch – I have a friend who is allergic to corn. Also will add the cup of heavy cream to make a fantastic gravy. Omygoodness! It’s simmering right now. I took a sneak taste and I’m telling you right now. STOP what your doing and treat your family to this recipe. I have fresh buns to serve with this and I know it will be a hit tonight for dinner. The only thing I wished that I would have done differently is double the recipe. I will next time, and YES! There will be a next time. Yum!
The stew turned out great! I added browned mushrooms cooked in 1 tbsp butter at the end. Recommend cooking the chicken at med and using a thermometer to test doneness as it can end up over done. Itโs ok to take the chicken out a little early as it cooks more the last 15 to 20 minutes. Also, I didnโt add potatoes as they tend to be mushy when reheating leftovers. Loved the seasoning and the recipe overall.

Just made this for the first time and it is excellent! I added the cream to it. I’m. I liked the seasoning especially the ๐ต parsley, sage, rosemary, and thyme๐ตI’ll definitely make this again.
Amazingly good! I followed recipe as written. Delicious. My husband said that the only thing missing was a crusty loaf of bread. Of courseโฆI liked the recipe because it was within my diet calorie parameters. Next time we will add bread!
Mine was more soup than stew but I seem to always have an issue with thickening this type of dish. I did the corn starch slurry and added some cream. Whether it comes out as a soup or a stew, it is absolutely delicious!
I have discovered adding under cooked barley. Itโs an accepted carb for diabetes, and we LOVE it! Careful, it expands and will thicken the broth. My husband kindly grabs crackers for himself
