It provides all the nourishing warmth of regular soup, yet it is filling enough to be a meal all by itself. However, that doesn’t stop us from serving it with our favorite french bread. Chicken Options for Old Fashioned Chicken Stew:
We love the ease of using boneless skinless chicken breasts, but you can always use thighs or even a pre-cooked shredded rotisserie chicken.
Herbs:
If you would like to use fresh herbs, you can always substitute those in. You will want to increase the amount used to approximately 1 tablespoon each.
Cornstarch Substitute:
If you would prefer a creamier stew, you can add in 1 cup of heavy cream instead of the cornstarch slurry.
Make-Ahead and Reheating Instructions:
You can always make your stew up to 24 hours ahead of time. Simply store in the fridge and reheat in a saucepan over medium-low heat until warmed through.
Storage Instructions:
Store any leftovers in an airtight container in the fridge for up to 5 days.

This was a great recipe! I did add some shallots to the onions and used Yukon gold
Potatoes (only 4). I browned the chicken with skin on and with the bones. I did not use unsalted chicken broth. My husband said it was one of the best meals Iโve ever made! I will double it next time. Served with fresh bread & salad. Thank you!!

Old fashioned chicken stew was very good. But mine came out more like a soup. I couldnโt get it thickened up. But we enjoyed it just the same. Iโll give it another try, I must have added too much broth.

This chicken stew tastes amazing! I added some sweet potatoes and only added 2 stalks of celery other than that I did as the recipe called for. The broth was so flavourful!! Will definitely be preparing this meal again.
Love this stew! I had a two cup servings each time until we ran out. Iโve loved it so much I was having this for both lunch & dinner, it kept me full and I was able to easily stay within my calorie budget. Sticking to my diet this week was easy & I lost weight as well. I will definitely be adding this to my regular rotation of meals.
