Juicy thick cut pork chops are simple to prepare and the result can rival any traditional beef steak. I’m not even kidding! And they are way cheaper to buy too. I call them my secret weapon when it comes to feeding a crowd on a special occasion.
Making a perfect pork chop is completely easy. If you haven’t had a thick cut pork chop before, well, prepare to fall in love with pork chops. Those thin, flimsy chops you see all over the grocery store dry out easily and lack the complete flavor pork chops have to offer.
You can buy a thick cut chop at almost any grocery, but you’ll probably have to ask for it. Just head on over to the meat counter and ask for a 1 1/2 to 2 inch thick cut pork chop. If you’ve got a good butcher, they will probably smile at your request. Keeping the bone-in helps retain both flavor and moisture, and cutting it thick practically ensures a juicy result.

I use the Costco thick cut pork chops as well. I donโt sear the chops though. I cover with grape seed oil, dredge in egg and generously coat with a mixture of crushed slivered almonds, Parmesan cheese and black pepper.. Bake. at 400 for 15 mins or until 145ยฐ. As time gets close, I use an instant read meat thermometer to make sure I donโt go over 145. So juicy, so delicious!
Dang, this recipe is the only one you need! I did brine my chops for a little while beforehand but that was just me being more safe than sorry. Next time around I’ll spare myself the bring but, one way or the other, this recipe is now in my quiver!

I brined my 2″ thick pork chop for 24 hrs then followed this recipe except I couldn’t put my cast iron pan on high heat because my smoke detector is ultra sensitive. I did sear the sides of my pork chops well 1st then ea side before I put them in a 400ยฐ oven for 15min. I took them out & let them rest for 10 min. I served them with homemade mash potatoes drizzled with the pan sauce & creamed spinach. My husband & 19 yr old son LOVED them! Thank you so much!
Made these this evening and they were Awesome! Followed the recipe just as written. My chops were 1 1/2 ” thick and after searing them, they took approximately 12 mins at 400 degrees. EVERYONE enjoyed them, from ages of 1 year-old to 62 years old. Thank You so much for a much needed, Simple, and very easy recipe.
Excellent! Our local Costco has very thick pork chops, which I usually grill. I wanted to try something different since it is freezing outside right now! This receipe was just what I wanted. The chops were moist and perfectly cooked. The cast iron skillet worked well, too.

I always brine my pork chops before for a couple of hours and then let sit out for at least 30 minutes after pouring off brine and then pat dry. We also like our pork chops to be pink in the middle so I pull the pork chops after 8 minutes in the oven. Heaven! simply tender, flavorful. My brine is:
Total 4 cups of water however only put 2 cups of water in the pot, salt, sugar, peppercorns and herbs. Then put Ice in a 2 cup measuring cup and then fill with water,sit to the side.
5 or 6 peppercorns
your choice of herbs, I use dried thyme about a tablespoon
and a teaspoon of sugar.
Bring to a boil until salt and sugar dissolved.
Turn heat off and let sit for about ten minutes and then add the ice water, let it sit until it is room temp.
place pork chops in a dish that can hold the pork chops (side by side) and pour the brine over and then cover and place in frig for at least a hour but I try and go for two because of how thick the chops are. Take out of brine and pat dry. Then cook.
I had the same thing! Thick pork chops from Costco and didn’t know how to cook them. I followed this recipe to the letter and they were wonderful. All I had was a 12″ cast iron skillet and it worked great.
This was an awesome chop! Made it Xmas morning as I am a night worker. And it’s a perfect chop. Will make this for company! Had a twice baked sweet potato salad. Walked the dog and watched a movie then went to bed!!!! Great for one person! But seared in duvk fat. I don’t eat much pork but this is the only way I will eat it once a month!!!!!
