I recently got to go on the trip of a lifetime on a Scandinavian Cruise aboard the Regal Princess. I about died of excitement I got the email inviting me to go. A cruise around Northern Europe? Why, yes, please! A cruise to Russia? YES! It was seriously a dream cruise. It’s certainly not your typical cruise, lounging in pools and hitting up beaches. Princess Cruises offers so much more than that!

A Baltic Sea Cruise is such an incredible way to see Northern Europe. We departed from Copenhagen, Denmark and cruised up to Oslo, Norway before moving on to Berlin, Germany followed by Talli, Estonia. Then it was off to Russia for an overnight stay in St. Petersburg. We rounded out the trip with Helsinki, Finland and Stockholm, Sweden before heading back to Copenhagen. You can see our itinerary HERE. If a cruise like this isn’t on your bucket list already, it should be! It was one of the most incredible experiences of my life. We saw 7 of the most beautiful cities in the world and, of course, we got to experience some absolutely incredible food. Food is pretty much my entire reason for traveling so you can bet I ate my way through Scandinavia.

Over the next few weeks I’ll be sharing several recipes inspired by my trip. Princess has a ton of onboard dining options and their food is pretty good. It’s made from scratch daily right on the ship which is pretty impressive.  To start my round of recipe sharing, I want to share with you the thing I consumed the most of on the entire trip.You’d think it would be the nutella donuts they served on board, or the fantastic room service pizza, or one of the several amazing pistachio dessert on board (because hello! Those are three of my favorite things in life!), but no…..it was this delicious Key West Cooler Mocktail.  I am not a drinker, but I’m all about mocktails. When my waiter recommend this one all I heard was “passion fruit juice” and I was sold. Passion fruit is one of my favorite flavors ever. When we lived in San Diego I used to buy huge bags of passion fruit juice at the farmer’s market. This mocktail is all about the passion fruit and it became an instant favorite for me!

When you go on a trip like this it’s always fun to bring back some recipes. Recipes are the best kind of souvenirs to me. There’s something magical about food that can take me right back to a place or situation or moment in my life. So let me take you back aboard the Regal Princess.
