What kind of yeast should I use?
All yeasts will work in this recipe. Itโs simply a matter of understanding how each kind of yeast works and differs. Instant dry yeast can be added straight to dry ingredients and doesnโt require any sitting or proofing. It also rises a bit quicker. Active dry yeast is a bigger size of granule and generally needs to be dissolved in a liquid before adding to a recipe. It activates a bit slower so expect 10-15 minutes extra in rise time.

How warm should the milk be?
The milk should be warm to the touch, between 100 and 110 degrees. You can use 1% up to whole milk.

What if I don’t have a stand mixer?
You can knead it by hand! Start out by stirring with a spoon until you canโt do it anymore and then knead it with your hands. Just keep on kneading until all the flour is incorporated and/or the dough is soft to the touch and only slightly sticky. Itโs a bit of a workout, but itโs worth it!

Can I make this recipe gluten free?
This recipe was not designed to be gluten free. Gluten free baking involves completely different chemistry. In general, you cannot substitute gluten free flour in baking recipes and expect it to work, however, several people have reported that a blend like Cup for Cup will work.

I followed your recipe but only let the dough rise one hour and i made 10 smaller rolls. because they didnt rise long enough they came out a bit heavy but my wife, daughter and I still enjoyed them! Thanks!
I love this recipe it’s so easy and tastes great. But now my family won’t eat store bought hoagies so I guess I’ll be permanently making these for our sausages.
Soft and delicious! They do bake up large though. Next time I will shape this recipe into 8 smaller ones. I added some garlic powder, onion powder, basil & oregano and they smelled so awesome when baking. So simple to make throwing everything in one bowl. This is now my go to recipe for hoagie rolls!
Can I use bread machine instant yeast for this recipe?

Yes you can. Bread machine yeast is just a form of instant dry yeast and can be used interchangeably with active dry yeast in the same amounts. It’ll just rise 10-15 minutes faster.

Hi! This sounds easy to follow which is awesome because Iโm very new to bread making. I just had a question, the standard instant yeast packets Iโve seen are 2 1/4 teaspoons would this work for the recipe or would I need to open two and measure out a total of a tablespoon? Thank you so much!
You’ll need to open two and measure it out.
Unless you live at a higher altitude, then it works great to use 1 packet!
What if I am using regular active yeast? Having to proof it, would I still use the same measurement of 1 TBS once it is proofed??
Yes, the measurements stay the same regardless of whether you are using active dry yeast or instant dry yeast.

Iโm not a fan of sweet breads so I cut the sugar in half (to 1 tbsp) and they were great. I used my oven as a proofing box for the first rise (preheat to 200 degrees, hold for ten minutes, turn off, let rise in closed oven). That cuts the first rise down to 30 minutes.
