Fluffy Scrambled Eggs Recipe
The method for scrambled eggs described here is a combination of the Gordon Ramsay method and the Alton Brown method. This combination takes the best of both and makes it approachable to the home cook.

Do you need to add milk to scrambled eggs?
You DO NOT have to add milk to scrambled eggs. We have found that the best fluffy scrambled eggs are made without milk, and instead use butter.

Eggs are packed with high-quality protein, vitamins, minerals, and healthy fats. They also contain all nine essential amino acids that the body needs and can not produce on its own. Meaning eggs can be included in a well-balanced diet.
Should I make scrambled eggs in a skillet or in a saucepan?
We have found that a small saucepan is better for making scrambled eggs than a skillet. The shape of the saucepan traps the heat differently and is able to cook our eggs from the side and slightly from the top as well as from the main heat source on the bottom, providing a better cooked fluffier scramble. We also found that nonstick saucepans work better.
If you don’t have a non-stick pan, you can use a well-seasoned cast iron skillet or a stainless steel pan with a bit more butter or oil to prevent sticking. The key is gentle heat and constant movement.
Troubleshooting
- If the eggs are too dry, lower your cooking heat next time and remove them from the heat a bit earlier.
- For runny eggs, ensure you’re cooking them just long enough for them to set without overcooking.

I have always beaten the eggs prior to putting in pan, and added 1/2 tsp. cream of tartar to make them fluffy I will try this..in the morning. Thank you.
Was not impressed with this method of cooking scrambled eggs, I tried the recipe twice. The first time they came out rubbery and the second time they wet.
Chef Ramsay did it like this too on Master Chef a few years ago. I love the way it makes the eggs so fluffy.

Try putting a little seltzer water plain and not club soda. To really make them FLUFFY
I scramble my egg(s) in the microwave since there is only one of me. You get an omelet-type result. It is one egg in an oil-sprayed, 2-cup Pyrex measuring cup, lightly beaten, a little butter added, and a tiny bit of milk or half and half added. Cook for one minute, break up with fork and serve. It is foolproof and delicious. If you want two eggs, just add a minute for two eggs! One egg, one minute, two eggs, two minutes. I’ve never tried more than two eggs—you might need a larger bowl and more butter and still a small amount of milk. Don’t overdo the milk!
The best scrambled eggs..6.fresh eggs in a bowl … use a whip or large fork beat the living daylights out of them until they are looking fluffy… add a quarter cup of milk… any kind …rapid stir again … melt a 1/4 stick of butter in glass pie pan… melt in microwave… slosh it around in the pan to coat the sides,,, put eggs in the glass pie pan and place in the microwave…cook one minute stir around then cook another minute stir until the eggs look almost done remove to a bowl to stop the cooking process add salt and pepper and enjoy…You can add bacon cooked or cheese or peppers anything you like just keep beating the fluffy eggs while adding prior to cooking…
Very similar to Gordon Ramsay’s recipe. I like this recipe. He adds Creme fraiche. I prefer yours. Do you keep directly on heat or do you remove to stir?
Excellent. Except for breakout the eggs directly in the pan, I’ve essential been making eggs this way for years.
