Making a perfect pork chop is completely easy. If you haven’t had a thick cut pork chop before, well, prepare to fall in love with pork chops. Those thin, flimsy chops you see all over the grocery store dry out easily and lack the complete flavor pork chops have to offer.
You can buy a thick cut chop at almost any grocery, but you’ll probably have to ask for it. Just head on over to the meat counter and ask for a 1 1/2 to 2 inch thick cut pork chop. If you’ve got a good butcher, they will probably smile at your request. Keeping the bone-in helps retain both flavor and moisture, and cutting it thick practically ensures a juicy result.

Absolutely delicious! Had 1 1/2″ thick chops so it took a little longer. Juicy and delicious! Make sure you use a meat thermometer so it isn’t overlooked. I like 145* The simplicity of this recipe is terrific which makes it go well with any side or add a sauce. I made a simple sauce by pouring off all the grease, deglazing the pan drippings with a little bourbon (add off the heat then return to heat once it’s poured) then added some peach preserves, a splash of lemon juice. Watching our fat intake but if your not a pat of butter makes the sauce insanely relish! Great recipe! Thanks for sharing.
Absolutely delicious! I let 1โ thick bone-in center cut loin chops sit at room temp for 30 minutes. Salted generously with kosher salt and liberally with fresh ground pepper. I followed your instructions exactly, removing chops from oven after 13 minutes at 142 degrees. Removed from oven and Let rest for 5-6 mimutes. Perfect answer to my question about how long to bake. Have an already marinaded chop. Shorter time than I expected. Also glad the oven is set to 400ยฐ, as I happen to have a squash in at the same time.
I followed this recipe today and it was so good. I had put my chops in a marinade before I found the recipe… Followed the same instructions otherwise. I guestimated they were between 1/2 and 1 inch, so I did 12 minutes in the oven. They were perfect!! I removed them after resting a bit and poured the grease off and made yummy gravy with the drippings… I finally learned at age 51 how to cook pork chops. I was cooking them way tooooooo long.
I made this last week and can’t believe how good it was. Just bought 2 more chops and will be making again this week. Finally realized I’ve been cooking my chops way too long.

Cast iron dutch oven should work just fine, if you leave the lid off while browning AND baking.
