Juicy thick cut pork chops are simple to prepare and the result can rival any traditional beef steak. I’m not even kidding! And they are way cheaper to buy too. I call them my secret weapon when it comes to feeding a crowd on a special occasion.
Making a perfect pork chop is completely easy. If you haven’t had a thick cut pork chop before, well, prepare to fall in love with pork chops. Those thin, flimsy chops you see all over the grocery store dry out easily and lack the complete flavor pork chops have to offer.
You can buy a thick cut chop at almost any grocery, but you’ll probably have to ask for it. Just head on over to the meat counter and ask for a 1 1/2 to 2 inch thick cut pork chop. If you’ve got a good butcher, they will probably smile at your request. Keeping the bone-in helps retain both flavor and moisture, and cutting it thick practically ensures a juicy result.
Have a smoker? I also have a post detailing How to Smoke A Thick Cut Pork Chop that you should check out. Smokers are an amazing way to cook almost any meat. If you don’t already have a smoker, you should seriously consider getting one.

Recipe cooking instructions are PERFECT. I took the advice to โuse a heavy hand with the saltโ too literally and even though I normally use a lot less, I added more than usual. DONT! If you normally like and use salt. Just use your best judgement.
Mine needed anout 28 oven minutes to get to 140.
Wow! These are delicious. I am so impressed that a recipe so simple created pork perfection. Thanks so much for sharing.
Iโve made these many times. Everyone loves them. They always turn out juicy and delicious.
I season them with Spice Islands Old Hickory Smoked Salt and Lawryโs Garlic Salt.
Iโm into simple and this passed. Iโm vary happy I found your thick pork chop recipe and will check back to make more masterpieces.
This is the best pork chop recipe that I’ve ever prepared… They were tender, juicy and full of flavor. I will DEFINITELY make this again!
Good cooking method, but I’m just wondering where everyone is getting what must be enormously thick pork chops. Because 15 minutes seems excessive. Twice I’ve done this with the thickest pork chops I’ve ever seen in a grocery store or butcher shop, and they were at an internal temp of over 170 within 9 or 10 minutes in the oven.
Hey Steve about the thickness. I do believe that over a inch allows it to be called thick but this recipe fits a 2โ thick pork chop. So cut back heat or time for a 1โ. Hope I helped.
Costco in Canada has 2 inch thick chops usually
I found your recipe for these and have never made pork chops any other way again!! Absolute favorite of ours!! Thank you for sharing…as always. You are my go-to for everything!!
