Juicy thick cut pork chops are simple to prepare and the result can rival any traditional beef steak. I’m not even kidding! And they are way cheaper to buy too. I call them my secret weapon when it comes to feeding a crowd on a special occasion.
Making a perfect pork chop is completely easy. If you haven’t had a thick cut pork chop before, well, prepare to fall in love with pork chops. Those thin, flimsy chops you see all over the grocery store dry out easily and lack the complete flavor pork chops have to offer.
You can buy a thick cut chop at almost any grocery, but you’ll probably have to ask for it. Just head on over to the meat counter and ask for a 1 1/2 to 2 inch thick cut pork chop. If you’ve got a good butcher, they will probably smile at your request. Keeping the bone-in helps retain both flavor and moisture, and cutting it thick practically ensures a juicy result.

My chop was about 1.5″, oven temp was 400, and I timed the 2-minutes-per-side searing.
After 15 minutes in the oven, my chop’s internal temperature was 180 degrees, and had the relative consistency of a pencil eraser.
I found that 15 mins was too long for my oven as well. I sear each side for 1 1/2 mins on med-high heat(not high) & I only put them in the oven for a 10 mins, remove them from the cast iron and let them rest for 5 mins on the plate. They come out perfectly!
I follow her instructions precisely. I use a cast iron skillet on a gas stove and get it to 500F and I use a handheld laser thermometer to check. I make this every few months. Each chop I buy feeds two adults. Amazingly easy and delicious and consistent recipe.
Marinated my two inch chops with brown sugar and thyme and pineapple juice brown sugar for six hours. seared for two minutes on each side lightly sprinkled Robโs mate rub and brushed Robโs sweet. And Tangy BQ sauce in a 400 degree oven for 15 minutes they turned moist and melted in your mouth
I get 2 inch bone in pork chops from my butcher. Normally, I use the same process, pat dry, coat with olive oil, plenty of salt, little pepper then I fry them in a cast iron skillet till cooked, flipping a few times. Mine were always pretty juicy but this method is superior! 2 minutes a side and into the oven. These are more juicy and more tender than my previous way of cooking them. We liked these so well I think I am going to cook my next steaks the same way. Thank you very much.
Good Idea. I cook filet mignon the same way, though with a far shorter time in the oven, and it always comes out great.
