I bought a Pioneer Woman 11″ square cast iron grill, and used 1 3/4″ center cut chops, they were out of this world.

I have the butcher cut me 2 rib Iowa Pork Chops!!
I soak it in cool salt water for about 15 minutes before I rub on the olive oil. Gets the salt in better in the meat. Dry and rub light Olive oil on the chop and season with pepper. The rest is like this receipe.
