Rice noodles, rice, and cabbage, topped with delicious Korean bulgogi, drizzled with sriracha mayo and Korean barbecue sauceโฆ.it’s seriously so good!
So there’s this amazing food truck in Utah called Cupbop. It’s so popular it has expanded to multiple states with several permanent locations. I grew up eating bulgogi at home so a Korean food truck is something I could totally dig. They serve beef bulgogi (thinly sliced Korean beef) over noodles, rice, and cabbage with these totally delicious sauces. Cupbop is one of my favorite food trucks and I’ve chased it all over the place. But I swear, I have to drive 30 minutes to get to the food truck locations. Time to make my own recipe at home.
Now, those sauces are what makes the dish. It is served with a sriracha mayo and some kind of Korean barbecue sauce. Now, I don’t know if these are exactly what Cupbop uses in their truck, but I can tell you it is pretty dang good. I’ve decided to keep it quick by using a plain barbecue sauce and adding in Korean ingredients. It’s a nice little cheat.
I just made this recipe and it was DELICIOUS! Thank you so much. I tried Cupbop for the first time two weeks ago and I've been craving it since then. When I made it I doubled the marinade and used it with beef and chicken. So, so good!
I had a Cupbop pork bowl in Provo last week and I can't stop thinking about it. I can't wait to try your recipe! Thank you so much!
Would it be sacriliegeous to eliminate the packed brown sugar from the marinade? I've been looking all over the interwebs for a homemade version of CupBop but alas, I'm also on a low carb diet and will be making some adjustments. Just wondering if the brown sugar is vital to the marinade.
Thanks!
You are going to be so sad about my answer. I consider the brown sugar to be vital. You could certainly try making it without the brown sugar, but it will be very different. Losing the sweetness really changes the flavor in an Asian marinade.
It should actually be sweet potato starch noodles, but thanks for the rest of the recipe.
Thanks for the tip! That might be a little hard for most people to find. Pad Thai noodles are carried in most grocery stores and makes a great alternative.
Great meal! Even my husband liked it. And fairly simple for someone who doesn't cook Asian very frequently. Thanks so much!
I love this and I love food trucks!! go you! I've chased a few around town in my day too ๐
I love Korean food and I love bulgogi. Question: is it the noodles that make this cupbop (which I have never heard of) as opposed to a bi bim bop? Either way, pinning and trying!
Cup Bop is just the name of a local Food Truck.
Flavor. Explosion. I need a bowl right now!!
I want this now!!!
OMG. This sounds amazing. Those sauces!!
