I was hungry for enchiladas but in the middle of a living room remodel and really tired. Put these together in no time. Only had 1lb. of ground beef and chicken broth instead of vegetable broth but these were great. Also, too tired to roll them, so just tore tortillas and layered everything. I will be using this recipe from now on!

Certainly! Though I prefer to prep them completely the day before, and the day of simply preheat the oven and bake. Once the baking dish filled with enchiladas, just cover it with plastic wrap and stick it in the fridge until ready to bake.
