Korean fusion food is all the rage these days and this meatloaf is definitely something to rave about. You’ll be craving it for days! Korean BBQ is sweet and tangy and brings a bit of spice. Take your regular meatloaf and add in a little Asian flair, and that’s what we’ve got here. It’s totally delicious!
The majority of the ingredients in this recipe you can easily find in any American grocery store. But this recipe calls for an ingredient that you may have difficulty finding outside of an Asian supermarket. It’s called gochujang and it is a spicy pepper paste used in Korean cooking. It’s absolutely delicious and brings an authentic feel to the dish. You can always order it off of Amazon, but if you can also substitute crushed red pepper flakes as an Americanized alternative or any other Asian hot sauce like sriracha sauce. Don’t like heat? You can also leave it out!

This is the best meatloaf Iโve ever had. Iโm a meatloaf fan but this is in a whole new world. I did it exactly as the recipe said and it was wonderful. My husband and I had to stop ourselves from eating the whole thing in one seating. Thanks for sharing.

Tried this today for the first time-was looking for something different. After one bite my husband said “it’s ok” which coming from him was a compliment. I also enjoyed it but found it lacking in the salt department. Will make this again but will add salt, also for those who decide to try this recipe, I would strongly suggest you put aluminium foil in the bottom of your pan as the high temperature causes the glaze to make a sticky mess.
Delicious! I followed the recipe exactly and it was great – I did add a star anise to the glaze while simmering, which was a delightful addition. Plus it made awesome sandwiches with a little sriracha Mayo/soft bun/thinly sliced cucumber!
What a delicious twist on meatloaf. I have only recently discovered gochachung – itโs so tasty . Iโm looking forward to my meatloaf sandwich tomorrow.
