I will reduce the amount of chili powder in the sauce next time. Just too much heat for me.
Also will soften, dip, fill and roll the tortilla a few at a time. I used the thin tortillas and they got too soggy and tore towards the bottom of the pile on the plate. Still tasted great.
I liked that the sauce used vegetable broth. First time I have used that. I will make these again. I liked it with sour cream . Thank you for sharing your recipes. Never had a bad one.
Enchilada recipe was good. I like the sauce a little different. Maybe 1 tbsp less chili powder and add 1/2 cup of sour cream or more.

Iโm shocked how my kids absolutely killed this dish! I wondered if it would be too โchili powderโ flavored for them but it was a non issue. The one and only change I made was that I couldnโt get my sauce to thicken up until I added a second tablespoon of cornstarch. Other than that I followed everything to the tee.
