Can I use store bought enchilada sauce?
This recipe calls for a quick homemade red enchilada sauce. It is super easy to make enchilada sauce at home and takes less than 10 minutes, but if you’d like, you can always use a store bought can. You’ll need one 15 ounce can, or about 2 cups.
Can I use flour tortillas instead of corn tortillas?
Traditionally, enchiladas are made with corn tortillas, but you can also use flour tortillas if you’d like. The texture will be softer than when prepared with corn tortillas. No heating of the tortillas will be necessary.

Got the new cookbookโ I made this!!! Oh my gosh delish! Iโm such a fan of SAHC!!!! I made it into a bake to save time. Enchilada sauce on bottom, layer of tortilla, layer of meat, cheese tortillas, sauce and cheese!!! It worked perfectly and saved time of the individual rolls (though I realize this is NOT a typical enchilada so donโt come at me ๐)
I love these! I do make a couple of small changes. I use pepper Jack cheese because we like the little bit of heat, and, if I have them I add diced fresh jalapeรฑo & a can of drained Rotel to the filling, in addition to the small can of green chilis, just because I like the tomatoes & I think they add nice color. Iโm going to have to make these now! ๐

Made this for the first time tonight and it was AMAZING! I ran out of Chili powder so I only used 2 TBSP and it was plenty. Also used ground turkey and some shredded chicken and did half chicken and half turkey. Also used low sodium veggie broth and one can of mild green chilies because we have to watch the sodium in our home. These turned out so yummy! Thank you so much!
