Enchiladas originate in Mexico where people have been wrapping corn tortillas around fillings since Mayan times. You’ll find there are a wide variety of preparations, fillings, and sauces out there. This version uses corn tortillas that are filled with a mixture of ground beef, onion, chiles, and spices. Add in a little cheese and it’s smothered with a simple red chili powder enchilada sauce. This is a popular preparation that comes from Northern Mexico and the American Southwest.

When you refer to chili powder are you referring to the same chili powder that you would make chili con carne with.? In some East Indian dishes they use chili also but it means cayenne pepper. Or is your chili referring to paprika powder?
Thanks
I want to try making this recipe it sounds delicious.
Chili powder is referring to the paprika based spice blend. Here’s a recipe for homemade chili powder: https://www.spendwithpennies.com/homemade-chili-powder/
If you don’t want to make chili powder from scratch. I use Original Mexene Chili Power Seasoning.
