This easy meatloaf recipe is for cheese lovers only! There's an entire 8 ounce brick of ooey gooey melted cheddar cheese in the middle of this Jalapeño Cheddar Stuffed Meatloaf that takes it over the top!
Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking pan with nonstick cooking spray.
In a large mixing bowl, combine 2 pounds ground beef, 1 cup plain bread crumbs, 1 tablespoon Italian seasoning, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 cup milk, 1 large egg, 2 tablespoons Worcestershire sauce, and minced 1 to 2 jalapeños. Knead until evenly mixed.
Divide the meat mixture in half. Shape one half into a loaf base and place it in the prepared pan. Place the brick of 8 ounces cheddar cheese in the center. Shape the remaining meat mixture over the top, sealing the edges around the cheese to form a complete loaf.
Glaze
In a small mixing bowl, whisk together 1 cup ketchup, 1/4 cup brown sugar, 1 tablespoon Worcestershire sauce, 1 tablespoon red wine vinegar, minced 2 teaspoons minced garlic, 1/8 teaspoon salt, and a pinch cayenne pepper. Pour the glaze evenly over the meatloaf. Arrange sliced jalapeño on top as a garnish.
Bake
Bake in the preheated oven for 60 to 80 minutes, or until the cheese is fully melted and the meat reaches an internal temperature of at least 160°F (71°C).
Let rest for 10 minutes before slicing. Serve warm.
