Traditional Chicken Salad is a tried and true favorite for almost any kind of gathering. It’s easy to make and tasty by itself, atop lettuce, or served on sandwiches.
Roughly chop 12 ounces shredded cooked chicken. Mince 1 celery rib and prepare 2 tablespoons minced onion. Halve 1/4 cup red grapes. Transfer to a large mixing bowl.
Add 1/4 cup slivered almonds, 1/2 cup mayonnaise, 1 teaspoon lemon juice, 2 teaspoons whole grain mustard, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and 1 pinch garlic powder.
Stir until well combined and refrigerate until ready to serve.
Serve as sandwiches on 4 croissants, or atop a bed of lettuce, or stuffed inside a tomato or avocado.
