Roughly chop 12 ounces shredded cooked chicken. Mince 1 celery rib and prepare 2 tablespoons minced red onion. Halve 1/4 cup red grapes. Transfer to a large mixing bowl.
Add 1/4 cup slivered almonds, 1/2 cup mayonnaise, 1 teaspoon lemon juice, 2 teaspoons whole grain mustard, 1/4 teaspoon salt, 1/4 teaspoon black pepper, and 1 pinch garlic powder.
Stir until well combined and refrigerate until ready to serve.
Serve as sandwiches on 4 croissants, or atop a bed of lettuce, or stuffed inside a tomato or avocado.
