Ingredients

pound
boneless pork loin chops
cut into 1/2-inch cubes

cooking oil

sesame oil

teaspoon
black pepper
1/2
teaspoon
ground ginger

cups
frozen peas and carrots

tablespoons
minced garlic

large eggs
beaten

cup
green onions
chopped

cups
cooked rice

cup
soy sauce
(regular or low sodium)
Instructions
Heat a large skillet or wok over medium-high heat and add cooking oil and sesame oil.
Once heated, add the pork cubes and season with salt, pepper, and ginger. Sauté and cook for 5-7 minutes.
Reduce the heat to low, remove the pork from the skillet and set aside. Add the peas and carrots and sauté for about 2 minutes.
Add the minced garlic and sauté for about 1 minute.
Move the vegetables to the side and pour in the beaten eggs. Cook alongside the vegetables.
Lower the heat to medium-low and add the cooked pork, rice, and green onions. Stir carefully to combine.
Drizzle with soy sauce and heat thoroughly.
Serve hot and enjoy!
